German Quark Cake

This classic dessert gets a delightful twist with the addition of Milton Creamery Quark, which lends a tangy, creamy richness that perfectly complements the vanilla-scented cake.
If you have the time, whip up a batch of homemade vanilla sugar before you start - it's a simple step that takes this cake from ordinary to extraordinary. One bite and you'll be swooning!
optional Prep: Vanilla Sugar
Put a vanilla bean in a jar with as much sugar as it will hold with a tight-fitting lid.
In 10 days you will have vanilla sugar.
Top it up as you use it; the bean will last up to 3 years
Ingredients:
7 Tbsp unsalted butter, at room temperature
½ c sugar or Vanilla Sugar
3 eggs, at room temperature
16 oz Milton Creamery Quark, at room temperature
½ tsp salt
Zest of one lemon
1 Tbsp lemon juice
1 tsp vanilla extract
¼ c + 2 Tbsp sifted All Purpose flour sifted with ½ tsp baking powder
Directions:
One hour before starting the recipe, set out the butter, eggs, and quark to come to room temperature.
Preheat the oven to 350F.
Grease a 9”X5” loaf pan and flour it lightly; set it aside.
In a large bowl, with a hand mixer, beat the sugar and butter together until fluffy.
Add the eggs, one at a time, beating continuously.
Add the quark and beat until smooth.
Add the seasonings through vanilla extract, while beating.
Add the flour-baking powder mixture and beat until just thoroughly combined.
Pour the batter into the prepared loaf pan.
Smooth the top with a spatula and bang hard on the counter a few times to settle the batter fully.
Set the loaf pan in the preheated oven and cook for 45 minutes. Look for a lightly golden top.
Turn off the heat, prop the oven door open with a spoon and leave the cheesecake there to cool for 90 minutes.
Serve this crustless cheesecake with warm fruit compotes: strawberries with sugar and balsamic vinegar; prunes and port; mixed tropical fruit with curry and brown sugar. Expect it to settle from its very puffed appearance as it finishes cooking.
