4 Alarm Rarebit

If you've never heard of Welsh Rarebit, you're in for a treat!

This classic British dish is essentially a fancy version of cheese on toast, but don't let its simplicity fool you. With a rich, savory cheese sauce made from bold, spicy 4 Alarm cheddar poured over crisp, toasted bread, this is comfort food at its finest. The fiery kick of 4 Alarm cheddar takes this humble dish to a whole new level, making it a satisfying and memorable meal that's perfect for any time of day.

 

 

Ingredients:

2 Tbsp butter

2 Tbsp all-purpose flour

1 tsp Dijon mustard

1 tsp Worcestershire sauce

½ tsp salt

½ c Porter beer, can be N/A if desired

¾ c heavy cream

6 oz Milton Creamery 4 Alarm Cheddar, grated

Hot Sauce to taste

4 thick cut slices of pumpernickel, or artisanal whole wheat

 

 

Directions:

  1. Over low heat in a two quart saucepan, melt the butter and allow it to foam and subside.

  2. Whisk in the flour, whisking constantly, and cook for a further four or five minutes without letting the flour brown.

  3. Start toasting your bread slices.

  4. Continue whisking and add in the mustard, Worcestershire sauce, nutmeg and salt.

  5. Add the beer while whisking, then pour in the cream. Whisk until well combined and smooth, then gradually add the cheese, still stirring, until the rarebit is completely smooth, another four or five minutes.

  6. Add hot sauce (if desired).

  7. Arrange the toast on plates, pour the 4 Alarm Rarebit over them and serve immediately.
