Breakfast Eggs Florentine

Ingredients:
1 10 oz package frozen chopped spinach, thawed and squeezed dry
3 Tbsp all-purpose flour, sieved
3 eggs, beaten
½ tsp nutmeg
½ tsp salt
12 oz Milton Creamery Quark, or cottage cheese
4 oz Milton Creamery Morning Harvest, grated
¼ c (4 Tbsp) butter, melted
Directions:
Preheat the oven to 375F.
Grease a 9 X 13, or 23 x 33 x 5 cm, dish and set aside.
In a large mixing bowl, combine the spinach and flour thoroughly.
Stir in the eggs, salt, nutmeg, quark, Morning Harvest, and melted butter.
Pour the egg mixture into the prepared dish, smoothing the top, and banging the dish twice on the counter to settle the contents.
Cover with foil. Bake for 45 minutes at 375F.
Uncover and bake 15 minutes more, until the top has puffed and turned golden brown.
